In 1935 there were 3500 dairymen in McLean county of Illinois. In 1955 there were 350. Today there are 7. Meet Ray Ropp and his wife Carol and their 70 head of Jersey Cows. When their son came back to the farm in 2000, they had to expand their operations to support two families. With Ropp Jersey Cheese they were able to support two families and survive the rocky weather of up and down dairy prices.
